- 8 oz. package Stellina Whole Wheat Walnut Fettuccine
- 8 oz. ground chicken
- 2 tablespoons olive oil
- 3 cloves garlic, chopped
- 1 cup mushrooms, sliced(domestic or combination of wild)
- 1 cup cherry tomatoes, various colors
- 2 Italian roasting peppers, sliced (any mild to medium hot pepper)
- 1 tablespoon balsamic vinegar
- 1 cup Stellina Homegrown Tomato Sauce
- sea salt
- craked black pepper
- shaved parmagiano-reggiano cheese
- toasted chopped walnuts
Season chicken with salt and pepper. Saute chicken in 1 T. olive oil until just done - remove to dish. Add remaining 1 T. olive oil, add garlic, mushrooms and peppers - saute on medium-high heat until mushrooms have browned at the edges. Deglaze with balsamic vinegar. Add tomato sauce, cherry tomatoes and previously cooked ground chicken. Season to taste. Simmer 7 to10 minutes.
Meanwhile, cook pasta according to packaged directions and drain. Place pasta on large platter and top with sauce. Shave parmagiano-reggiano cheese over top, sprinkle with walnuts and serve.
